My sister is allergic to shellfish and pretty afraid of most other seafood as a result. But she LOVES Thai food, and when she finds a food she loves, she finds a way to make it at home (a true myChef!) So, when she started researching how to make Thai green curry, and invested in fish sauce, I decided it couldn't be too fishy.

So what is fish sauce? Well, according to the bottle, it's simply anchovy extract, salt, and sugar. Nothing too scary! What a relief, because I think this is one of those key ingredients worth having on hand when trying to make any kind of Thai food. Add it to Thai green curry, pad thai, or make a nice satay sauce with it. In fact, the recipe for traditional Thai dipping sauce is right on the bottle:

  • 1 minced serrano chili
  • 1 clove minced garlic
  • 3 tsp sugar
  • 2/3 cup water
  • 1 1/2 tbsp fresh lime juice
  • 5 tbsp Thai Kitchen Premium Fish Sauce (available at retailers including Giant!)

Stir well and enjoy with any cooked meats. You can even add shredded carrots if you like (it says so on the bottle!)
