A healthy and hearty salad packed with grains and veggies.
ingredients
- 1 bunchcarrots,
washed, halved lengthwise and sliced 1/8 inch thick
- 1sweet potato,
washed and sliced 1/8 inch thick, then halved lengthwise
- 2 tbspolive oil
- salt,
to taste
- fresh ground pepper,
to taste
- 1/4 cup(s)millet
- 1/4 cup(s)quinoa
- 1 cup(s)water
- 1 buncharugula,
washed and ends trimmed
- 1/2lime,
juiced
- 1 tbspbalsamic vinegar
- 2 clove(s)garlic,
finely chopped
- 1/2 tspsalt
- 1/4 tspfresh ground pepper
Instructions
- Heat oven to 425˚F.
- Place the carrots and sweet potato on a large rimmed baking sheet. Drizzle with the 2 tablespoons olive oil, season with salt and pepper. Toss with your hands until everything is well coated, then place in the oven for 30-35 minutes or until just tender, stirring half way through.
