  • 1 bunchcarrots,

    washed, halved lengthwise and sliced 1/8 inch thick

  • 1sweet potato,

    washed and sliced 1/8 inch thick, then halved lengthwise

  • 2 tbspolive oil
  • salt,

    to taste

  • fresh ground pepper,

    to taste

  • 1/4 cup(s)millet
  • 1/4 cup(s)quinoa
  • 1 cup(s)water
  • 1 buncharugula,

    washed and ends trimmed

  • 1/2lime,

    juiced

  • 1 tbspbalsamic vinegar
  • 2 clove(s)garlic,

    finely chopped

  • 1/2 tspsalt
  • 1/4 tspfresh ground pepper

Instructions

  1. Heat oven to 425˚F.
  2. Place the carrots and sweet potato on a large rimmed baking sheet. Drizzle with the 2 tablespoons olive oil, season with salt and pepper. Toss with your hands until everything is well coated, then place in the oven for 30-35 minutes or until just tender, stirring half way through.
