Use whole milk to minimize curdling - a tip from Faith @ An Edible Mosaic.

  • 1 tbspbutter,

plus more to grease the pan

  • 3 tbspall purpose flour
  • 4 mediumpotatoes
  • 2 large clove(s)garlic,

  • 1 small-mediumonion,

    finely diced

  • 1 tbspolive oil
  • salt
  • 1 1/2 cup(s)whole milk
  • fresh ground pepper

  1. Preheat oven to 375F, and grease a 1 1/2 to 2-quart casserole dish with butter.  Heat a medium saucepan over medium-low heat; add oil and sauté onion and garlic until softened but not brown (about 8-10 minutes), stirring occasionally.

  2. Peel potatoes and slice into 1/4-inch thick rounds; cut the 1 TB cold butter into very small pieces.  On the bottom of the prepared dish, arrange 1/4 of the potato slices, then top with 1/3 of the onion mix, 1 TB flour, a few pieces of butter, and a sprinkle of salt and pepper.
