Creamy potato side dish with garlic

ingredients
- 1 tbspbutter,
plus more to grease the pan
- 3 tbspall purpose flour
- 4 mediumpotatoes
- 2 large clove(s)garlic,
minced
- 1 small-mediumonion,
finely diced
- 1 tbspolive oil
- salt
- 1 1/2 cup(s)whole milk
- fresh ground pepper
Instructions
- Preheat oven to 375F, and grease a 1 1/2 to 2-quart casserole dish with butter. Heat a medium saucepan over medium-low heat; add oil and sauté onion and garlic until softened but not brown (about 8-10 minutes), stirring occasionally.
- Peel potatoes and slice into 1/4-inch thick rounds; cut the 1 TB cold butter into very small pieces. On the bottom of the prepared dish, arrange 1/4 of the potato slices, then top with 1/3 of the onion mix, 1 TB flour, a few pieces of butter, and a sprinkle of salt and pepper.
