An excellent spring meal with an interesting twist - Chinese black rice.
Tips
This recipe from fresh365 is best when you press the tofu between towels for 15 minutes to dry it out - use a bowl or other heavy object to press down on the tofu.
ingredients
- 1 14-oz blockfirm tofu,
pressed
- 1 1/2 cup(s)orange juice
- 1 tbsphoney
- 4 clove(s)garlic,
minced
- 1/2 tspsalt
- 1 cup(s)Chinese black rice
- 2 cup(s)water
- 4 tbspextra virgin olive oil
- 20 stemsasparagus,
tough stems removed and cut into 1 inch pieces
- 1 small bunchfresh chives,
finely chopped
- 1 cup(s)basil,
cut into thin strips
- 1/4 cup(s)pine nuts,
toasted
- 1 tbspred wine vinegar
- fresh ground pepper,
to taste
Instructions
1. Combine pressed tofu, orange juice, honey, garlic and salt in a large bowl. Gently toss to coat tofu. Let sit at least 15 minutes.
2. In a medium sauce pan, combine black rice and water, over high heat. Bring to boil and then reduce heat to simmer, 30 minutes. Set aside.
