ingredients
  • 2boneless, skinless chicken breasts
  • 1 tbspcanola oil
  • 2 tbspred curry paste
  • 1 can(s)coconut milk
  • 1 can(s)bamboo shoots,

    sliced and drained

  • 1/2-1 tspfish sauce
  • 2 tsplight brown sugar
  • 2 tsplime juice,

    freshly squeezed

  • 2green onions,

    shredded

  • 1/2red bell pepper,

    slivered

Instructions

  1. Place the boneless chicken breasts between 2 pieces of plastic wrap and with a meat tenderizer mallet pound each to ½ inch thickness. Slice into 1 inch pieces.
  2. Heat the oil in a large non-stick sauté pan or wok. Quickly stir fry the chicken for 2 minutes. Add the curry paste and stir fry for another minute.
